Make your favorite meals nutritious and delicious. Living along the southern boarder most of my life it is no wonder that I love tacos. But tacos can be loaded with sodium, fat and especially calories. But the good news is you don’t have to give up a good thing. My new favorite is turkey eggplant tacos!
Eggplant is high in fiber which helps with diabetes and heart disease. Among other benefits is folate, magnesium, potassium and it is an antioxidant fighting cancer causing free radicals. But my favorite benefit is the texture and taste of egg plant.
If you haven’t cooked an egg plant before don’t worry there is nothing to it. When you choose it from the grocery store make sure that it is not squishy when you pick it up. The skin should be firm.
Recipe for Eggplant Turkey Tacos
olive oil
1/2 eggplant diced
1/2 pound Ground Turkey
white or yellow Onion chopped
Mushrooms chopped
tsp Cumin
tsp Chili powder
Pepper and Salt to taste
Hard Shell taco shells
Sour Cream
Cheese grated
Lettuce, Tomato, Red Onion chopped
Heat the olive oil in a skillet, add the diced eggplant and saute until tender and browned. Add ground turkey, cumin, chili pepper, salt and pepper. Saute until browned and sizzling put aside. Bake taco shells in the oven according to the directions on the package. Build your tacos with the eggplant and turkey mixture, lettuce, tomato, red onion, cheese and sour cream. Yummmm!
